6-8 medium potatoes
1 lb. of bacon
If desired, 1/2 of an onion diced
Peel and cut potatoes.
Cook potatoes in grapeseed oil until soft. (Alternatively you can also add onions if you like. I do add them sometimes).
While the potatoes are cooking. Also cook bacon in your preferred method. After the bacon is cooked break up into pieces.
Break the eggs into a bowl and scramble. Put to the side to add to the potatoes later on.
Once the potatoes are soft, add the cut up pieces of bacon and the scramble eggs to the pan.
Cook until the eggs are done to your liking.
Add salt as you like.
