2 large zucchini
1 tablespoon salt
1 pound ground beef (Italian sausage would work or any other protein)
1 green bell pepper cut up
1 onion cut up
1 cup tomato paste
1 can tomato sauce
2 tablespoons chopped basil
1 tablespoon chopped oregano
15oz ricotta cheese
16oz chopped spinach (fresh or thawed frozen)
8oz shredded mozzarella cheese
8oz grated Parmesan cheese
Step 1 - Preheat Oven to 325 degrees and grease a 9x13 inch baking pan.
Step 2 - Slice zucchini lengthwise into thin slices. Sprinkle in salt and leave in colander to drain.
Step 3 - Brown meat. Add in bell pepper and onion after about 5 minutes and continue until meat is completely browned.
Step 4 - Stir in tomato paste, sauce, basil and oregano. Bring to a boil. Reduce the heat and simmer for 20 minutes, stirring frequently.
Step 5 - Combine egg, ricotta and parsley together in a bowl.
Step 6 - Spread 1/2 of the meat sauce into the bottom of the pan. Then layer 1/2 of the zucchini slices, 1/2 the ricotta mixture, all of the spinach, and 1/2 of the mozzarella cheese. Repeat layering process again. Top with Parmesan cheese evenly. Cover with foil.
Step 7 - Bake for 45 minutes. Remove foil and bake an additional 15 minutes.
