20+ Okra (or how many you prefer)
1 Onion (You can use whatever type you like. I use whatever I have on hand and they are all great).
2 Peppers (or how many you prefer)
3 tablespoons of grape seed oil or sunflower oil
2 teaspoon of Tony Chachere's seasoning
Step 1. Cut up okra across into several pieces (To save okra I just wash, cut, and freeze it in a baggie. When I am ready to cook it I just pour some out. It is the easiest method I have found). Cut up the onion. Cut up the peppers (I also cut peppers in season, removing the seeds and cutting into strips and freezing so I can pour them out into this, spaghetti, tacos, chili or whatever else presents itself during the year).
Step 2. Pour all the cut up ingredients into a cast iron skillet with the oil and pour on the Tony's as much as you like. Sautee for 20 minutes until browned. (Frozen ingredients may take longer).
Done. It's really simple and I don't have to scrap the cast iron when I am done and re-season the skillet that I have had to do when using batter. It's also gluten free which is great for our son. The kids love it. If I am grilling out I just put it on the side burner while I am grilling and it is typically done at the same time as whatever I am grilling. It keeps the inside of the house cooler on a summer day.
